1 lb Thinly Sliced Chicken Breast

1 Tube Pre-Cooked Polenta, Sliced

1 Cup Chopped Fresh Spinach

1 Jar Favorite Marinara Sauce

1/2 Cup Grated Parmesan Cheese

1 Cup Shredded Mozzarella Cheese

Olive Oil

Sorella Spices Italian Blend

Salt and Pepper to Taste
Directions
- Preheat the oven to 375°F (190°C).
In a baking dish, drizzle olive oil and place the sliced polenta at the bottom. Arranging them in rows (I usually put three slices), so you can layer chicken on top later. Season with Sorella Spices Italian Blend, salt and pepper. Bake for 10 mins.
Drizzle olive oil over chicken breast and season with Sorella Spices Italian Blend, salt, and pepper. Sear in skillet and cook until nearly done.
Remove polenta from oven and top with marinara sauce, chopped spinach, and sprinkle with parmesan cheese. Lay a piece of chicken over each row and top with more marinara sauce. I like to add more seasonings here and then finish off with the mozzarella cheese.
- Bake for 25-30 minutes or until the chicken is cooked through and the cheese is bubbly and golden.
- Let it cool for a few minutes before serving.
