Air Fryer Zucchini Polpette

Air fryers aren't just for proteins. In fact, air fried vegetables are easy and taste amazing. This air fryer zucchini recipe will wow you and keep them asking for more.
Ingredients:
- 2 - 3 medium Zucchini

2 T Ricotta Cheese
- 2 T Parmesan Cheese
- 1 Egg
- 1/2 C Breadcrumbs (I used panko in this)
- 1 T Sorella Spices Italian Blend
- Kosher Salt
Directions:

Grate zucchini and strain all water out using a cheese cloth.
- Add to mixing bowl and mix with the remaining ingredients.
- Roll into tablespoon size balls and place in airfyer.
- Cook for approximately 12 mins. They should firm up and get brown and crispy.
Serve with a side of marinara for dipping or place in baking dish, top with sauce and mozzarella cheese for a heartier dish.
