Chicken Enchiladas

Sorella Spices Chichen Enchiladas, using Fiesta Blend Spice

  • 1 lb. Chicken Breast
  • Flour or Corn Tortillas
  • Enchilada Sauce (trader joes or you can buy canned from whole foods)
  • Shredded Mexican Cheese Blend
  • Sorella Spices Fiesta Blend


  • Preheat oven to 375°F
  • Season chicken breasts with Fiesta Blend and cook through. Using two forks, shred the chicken in a bowl.  Add a little bit of sauce and cheese to chicken mixture. 
  • While you are shredding your chicken, warm your tortillas in the oven by wrapping them in foil. Also, prepare a baking dish by spraying with nonstick spray and then pouring a generous layer of the sauce into the bottom of the dish. 
  • Place a good portion of chicken mixture into each tortilla and roll. Place seam side down in dish. Cover the top with shredded cheese and drizzle over with the remainder of the sauce.  
  • Bake covered for about 30 mins and uncovered for another 5-10 mins until golden brown.
